Green Tomatoes

We planted late this year! We have 100 tomatoes but they are all green!! Last week we ate the first eggplant from our garden. a beautiful purple Siclian eggplant. Picked still a little on the young side-that way there’s not bitter taste- I sliced, salted, breaded & grilled it! And it was amazing. We picked some Swiss Chard too and  I made a salad with tomatoes, cucumbers, onions & mint all from my parents garden, mine are too green! You begin to appreciate the food on your table when you see the work involved in growing and caring for each ingredient. This year’s drought affected the progress of my garden, even if I did plant a little late. As I look online for the endless recipes that use green tomatoes, I catch a glimpse of an orangy-yellow hue on one of those delicious fruits; and I am reassured that with just a little bit more time I will enjoy a juicy red tomato!!

 

On a side note though, I do have the pleasure of enjoying some FRESHLY made sun dried tomatoes from Sicliy. If you LIKE us on Facebook, you will be able to see the actual pictures of the tomatoes as they went from vine picked to sun dried.
